Details
Cane cut in the morning and crushed the same day at a small open-pan unit near Kolhapur, because juice starts inverting within hours. The juice is clarified with lady's finger mucilage, the traditional method, and boiled down in an iron pan until it sets. Most market jaggery is bleached bright yellow with sodium hydrosulphite and treated with phosphoric acid, which is why it looks uniform.
