Details
Traditional tall basmati from the Doon valley foothills, the old low-yield variety rather than a modern hybrid bred for tonnage. After harvest it is rested for twenty four months in jute sacks in a ventilated godown, which is the only real way to age rice. The grain loses moisture slowly, firms up, and then elongates instead of breaking.
- Traditional basmati variety, not a high-yield hybrid
- Aged 24 months in jute, never chemically or heat aged
- Extra-long grain, 8.3 mm average, elongating to about 19 mm cooked
- No artificial perfume, no polishing agent, no oil or talc for shine
- No broken grain used to make up weight, under 2 percent
- Cooks grain-separate with 1 part rice to 1.5 parts water after a 20 minute soak
