Details

Single-variety black mustard from the Bharatpur belt of eastern Rajasthan, cold-crushed at first pressing so the allyl isothiocyanate survives and the oil actually catches at the back of your throat. Mustard oil is one of the most adulterated oils in India, and the dangerous one is argemone, so every lot is tested for it before it is bottled.
