Details
The short, plump, buttery-smelling rice of Bengal, grown in the Bardhaman districts where it carries a geographical indication. It is a single-harvest aman paddy, hand-threshed and sun-dried on the farm, then milled once and stopped there. Most branded rice goes through four or five polishing passes to look glassy, which strips the aleurone layer and most of the aroma with it.
