Details
Deggi mirch is the chilli you use when you want the colour of a good gravy without the burn. Ours is made the honest way: sun-dried Kashmiri Lal for colour and sweetness, blended with Byadgi from Haveri for its wrinkled skin and high pigment, stems pulled off by hand, most of the seed screened out, then stone-ground cold. Colour lands around 90 ASTA and heat around 1,800 SHU, so a full teaspoon reddens a curry without hurting anyone.
