Made the long way. Whole milk from Gir and Sahiwal cows that graze rather than stand, set to curd overnight with a live culture, hand-churned to butter at dawn with a wooden bilona, then simmered slowly until the water leaves and the grain forms. It takes roughly thirty litres of milk to make one kilo, which is the honest reason for the price. The quick method separates cream by machine and skips the curd stage entirely.
